Jalapeno poppers are a classic “bar food”, but certainly provide a wonderful Tailgate Party food. Easy to hold in one hand and delicious. This recipe is my take on this old classic. Deep frying them coated in Panko crumbs adds a wonderful savor to this dish.

Ingredients
Filling
- ¾ cup Extra Sharp Cheddar cheese grated
- ¼ cup Parmesan Reggiano finely grated
- 2 TBS Cream cheese Brought to room temperature
- 1 ½ tsp Chili powder
- ¼ tsp fresh thyme
- 2 Garlic cloves minced
Jalapenos and Stuffing
- 9-12 Jalapeno chilis
Assembly and Cooking
- 1 cup King Arthur All-Purpose Flour
- 2-4 large Eggs beaten
- 2 cups Panko crumbs
- Canola Oil
- Chives sliced (optional)

- Place the cheeses, chili powder, thyme, garlic and onions in a bowl and mix well.
Jalapenos and stuffing
- Taste each jalapeno since these can be very hot in spice or as tame as a green pepper.
- Cut the top of the jalapeno off.
- Using a small melon baller, scoop out the seeds and membrane of the jalapeno’s
- Fill with the filling and set aside.
Assembly and Cooking
- Dip the filled poppers in the flour making sure that they are fully coated.
- Dip in the eggs and then coat with the Panko crumbs.
- Heat the oil in a large pot and heat to 350 degrees. Use a thermometer attached to the side of the pot. Keep the oil at 350 degrees F, don’t let it decrease.
- Deep fry all the Jalapeno’s to a golden brown.
- Remove and place on a rack, then in a container filled with paper towels.
- Place on a plate and sprinkle with chives. Chives are optional.
- Serve.
