Jalapeno poppers are a classic “bar food”, but certainly provide a wonderful Tailgate Party food. Easy to hold in one hand and delicious. This recipe is my take on this old classic. Deep frying them coated in Panko crumbs adds a wonderful savor to this dish.
Place the cheeses, chili powder, thyme, garlic and onions in a bowl and mix well.
Jalapenos and stuffing
Taste each jalapeno since these can be very hot in spice or as tame as a green pepper.
Cut the top of the jalapeno off.
Using a small melon baller, scoop out the seeds and membrane of the jalapeno’s
Fill with the filling and set aside.
Assembly and Cooking
Dip the filled poppers in the flour making sure that they are fully coated.
Dip in the eggs and then coat with the Panko crumbs.
Heat the oil in a large pot and heat to 350 degrees. Use a thermometer attached to the side of the pot. Keep the oil at 350 degrees F, don’t let it decrease.
Deep fry all the Jalapeno’s to a golden brown.
Remove and place on a rack, then in a container filled with paper towels.
Place on a plate and sprinkle with chives. Chives are optional.
Serve.
