Step 1: Puerto Rican Sofrito
This is a condiment used in many recipes from Puerto Rico and other Latin American Countries. Although the recipes can be varied. You will use about 1/2 - 1 cup in the pasteles recipes.

Ingredients

Cilantro, roughly chop leaves and steams.
If you can find Culantro, use ½ & ½ with cilantro.

pitted green olives and roughly chopped

Capers drained

White Onions chopped roughly

Garlic cloves roughly chopped

Red Bell pepper roughly chopped
Instructions
Place the cilantro (and culantro), olives, capers, onions, garlic, and bell pepper in the bowl of a food processor.
Process until the mixture is of an applesauce consistency.
