Step 1: Anchiote Oil
This is a recipe for Anchiote oil, easy to make. It does give a yellow-red color, but also provides some taste.

- 2 cups Canola oil or other vegetable oil
- ΒΌ cup Annatto seeds
Place the annatto seeds in the oil in a pan over moderate low heat. Simmer the oil until a deep red color, then turn off the heat and set aside to cool.
Using a fine mesh strainer, strain the seeds from the oil.
Place the oil in a Bell jar or similar container and place in the refrigerator.
